A Fruitful High Tea in BOTC Penang 2022

In the recent Battle of The Chefs (BOTC) that was held in Gurney Paragon Mall Penang, Chef Yee Suet Rene and Young Chef Chong Xin Ye (student) participated in the category ‘Class M03: California High Tea Set’. Participation in this category required preparation of high tea products using California Milk Cheeses. 

Development of menu items began in May, with trials and training done mostly on weekends. This is because being a lecturer-student team, the weekends are a suitable for uninterrupted culinary training sessions. Over time, the duo improved the taste, size and presentation of each individual products. The last few weeks leading to the competition was challenging as there were semester examinations to complete as well. Commitment, determination and perseverance saw the team through.  

Despite numerous practice sessions on campus kitchen facilities, the actual setting of the competition arena was unexpected. The competition was held outdoor under a massive tent within the shopping mall compound. Being outside meant there was no air conditioning and the team was subjected to the warm ambient temperatures. This was particularly challenging as the desserts contain dairy components.  

Nonetheless much to team’s delight, the high tea set prepared were complimented for good taste and technicality. The judges commended that the menu items required lots of practice and coordination. Both Chef Rene and Young Chef Xin Ye managed to clinched a gold medal for the Real California Milk High Tea Set and second prize for Most Outstanding Real California Milk High Tea Set. The duo mentioned, “We are grateful for the wonderful assistance provided by Celine Tan (student) and the support received from the School of Hospitality and Service Management chefs team in our Real California Milk High Tea adventure. “
